Bun Bo Hue
The spicy lemongrass noodle soup from Hue, and the questions to ask before you eat.
Bun bo Hue is a spicy beef noodle soup from the city of Hue. Thick round rice noodles sit in a deep red broth flavoured with lemongrass and chilli, topped with sliced beef and herbs.
How will you meet it on the trip?
You will find it across central Vietnam, and in restaurants beyond. The bowl comes with lime, chilli and a plate of fresh greens. Taste the broth first, then add heat a little at a time.
Hue works best as a half-day move from Da Nang, so it fits a short central route. See the north or central comparison for how to choose.
What should Muslim travellers ask?
This broth is built from layers of flavour, and pork pieces or shrimp paste can be part of it. Ask what the stock is made from and whether pork is used in the kitchen. Never assume a stall is halal. Look for a certificate on display and ask who issued it.
Our meal and prayer checks list the questions to ask.
Which related terms will you see?
- Mi quang: a turmeric noodle dish from Da Nang.
- Nuoc mam: fish sauce, served on most tables.
- Pho: the flat-noodle soup of the north.

Common questions
How spicy is bun bo Hue?
It carries a noticeable chilli and lemongrass kick, but the heat is usually adjustable. Ask for the chilli on the side so you can add it slowly. Children and anyone who dislikes spice may prefer a milder noodle soup such as pho.
What is the difference between bun bo Hue and pho?
Pho uses flat noodles in a clear, gently spiced broth. Bun bo Hue uses thick round noodles in a deeper, spicier broth flavoured with lemongrass. If you want a first gentle bowl, start with pho and save this one for later.
Is a beef bowl safe for Muslim travellers?
Not automatically. Beef on top does not tell you what the broth, toppings or kitchen involve, and some versions add pork pieces or fermented shrimp paste. Ask what is in the stock, look for a displayed certificate and its issuer, and choose another dish if unsure.
