Banh Xeo
The crisp turmeric pancake you wrap in leaves, and what to ask before you order.
Banh xeo is a crisp Vietnamese pancake made from rice flour and turmeric, folded over a filling of shrimp, pork and bean sprouts. You tear off a piece, wrap it in fresh leaves and dip it in sauce.
How will you meet it on the trip?
It appears in central and southern Vietnam, usually at a busy restaurant where each pancake is cooked to order. A plate of lettuce, herbs and rice paper arrives alongside. Share one between two or three people before ordering more.

What should Muslim travellers ask?
Pork is part of the traditional filling, and the pan or oil may be shared with other meat. Ask for a version without pork and ask about the kitchen. Never assume a stall is halal. Look for a certificate on display and ask who issued it.
Our meal and prayer checks list the questions to ask.
Which related terms will you see?
- Goi cuon: fresh rolls, served cold with dipping sauce.
- Nuoc mam: fish sauce, the usual base of the sauce.
- Banh khot: a mini version of the pancake.

Common questions
Why is it called banh xeo?
Xeo describes the sizzle when the batter hits the hot pan. The name fits: the pancake is made to order, and you hear it before you see it. Watching the cook pour the batter is part of the fun at a busy stall.
How do you eat banh xeo?
Tear off a piece, place it in a lettuce or mustard leaf with a few herbs, roll it up and dip it in the sauce. Eating with your hands is normal here. A small group can share one pancake and still feel full.
Is banh xeo suitable for Muslim travellers?
Ask first. The usual filling combines shrimp, pork and bean sprouts, and the pan and oil may be shared. You can request a version without pork, but check the kitchen too. Look for a displayed certificate and its issuer rather than relying on a sign.
