Food term

Pho

The Vietnamese noodle soup you will meet on day one, and what to ask before you order.

Pho is a Vietnamese noodle soup made of flat rice noodles in a clear, spiced broth, served with sliced meat and fresh herbs. You say it roughly like “fuh”. A bowl is a full meal on its own.

How will you meet it on the trip?

You will see pho bo (beef) and pho ga (chicken) at street stalls and in restaurants. Your bowl arrives with herbs, lime and chilli on the side, so you season it yourself. Take a spoonful of broth first, then add what you like.

Styles change from city to city. Tasting one bowl in Hanoi and another in Da Nang is an easy way to compare. The food itinerary for Da Nang and Hoi An shows where noodles fit in a day.

What should Muslim travellers ask?

Pho broth is simmered from bones, and a stall may use one pot or ladle for different meats. A chicken bowl is not automatically halal. Ask what is in the stock and whether pork is used in the kitchen.

Never assume a stall is halal. Look for a displayed certificate and ask who issued it. Our meal and prayer checks list the questions to ask.

  • Bun: round rice vermicelli, served in soup or cold with herbs.
  • Banh mi: a baguette sandwich, a quick street breakfast.
  • Mi quang and cao lau: central noodle dishes from the Da Nang and Hoi An area.

Common questions

How do you say pho?

Say it roughly like the English word fur, with a short, questioning rise in the voice. You do not need perfect tones to order. Pointing at a picture, saying pho bo for beef or pho ga for chicken, and smiling will get you a bowl.

Is pho meant for breakfast?

Vietnamese people eat it at any time of day, including breakfast and late at night. For a first bowl, a morning stall is a gentle start because the broth is fresh and the portion is a full meal. Light eaters can share one bowl between two.

Is a chicken pho automatically halal?

No. Chicken does not make a bowl halal, because the stock, the ladle or the kitchen may involve pork. Ask what the stock is made from and look for a displayed certificate and its issuer. If you cannot confirm, choose a plain vegetarian dish instead.
