Bun Cha
Hanoi's grilled pork and noodle lunch, and why Muslim travellers should read the menu first.
Bun cha is a Hanoi lunch of grilled pork patties and slices, served in a bowl of sweet-sour dipping broth with a plate of cold rice vermicelli and fresh herbs. You say it roughly like “boon chah”. It is a street meal best eaten at midday.
How will you meet it on the trip?
You will see smoke from charcoal grills at lunch time around the Hanoi Old Quarter. The set arrives in parts: broth with patties, noodles, herbs and chilli on the side. You dip, eat and add what you like.
What should Muslim travellers know?
The dish is built around grilled pork, and the broth is made with it. It is not a dish to adapt. Choose another noodle dish and apply the checks in our meal and prayer checks. Never assume a stall is halal because it serves noodles.
Which related terms will you see?
- Banh mi: a baguette sandwich, a quick street breakfast.
- Bun: the round rice vermicelli itself.
- Nuoc cham: the sweet-sour dipping sauce.

Common questions
How do you say bun cha?
Say it roughly like boon chah, with a low, falling tone on the first word. You do not need perfect tones to order. Pointing at a picture and saying bun cha with a smile is enough at a street stall in Hanoi.
How do you eat bun cha?
You get a bowl of dipping broth with grilled patties, a plate of cold vermicelli and a pile of fresh herbs. Dip noodles and herbs into the broth a little at a time, and add chilli or garlic to your taste. Share one plate if you eat lightly.
Can Muslim travellers eat bun cha?
The dish is built on grilled pork, so it is not suitable for Muslim travellers, and the broth is made around it. Skip it and ask for a noodle dish with a clearly different protein, then check the kitchen as you would anywhere else.
